Parmesan Garlic Roasted Potatoes

This is an awesome alternative to the mashed or baked potato comfort food. The garlic flavor and the cheese make it a flavor explosion in your mouth.

8 potatoes
4 tbsp. olive oil
3 tsp minced garlic
2 tbsp. parsley
salt to taste
pepper to taste
4 tbsp. shredded parmesan cheese, divided

Preheat the oven to 450. Cut potatoes into rounds, then boil for 6 minutes. Drain potatoes and pour into a 9x13 baking dish sprayed with non-stick cooking spray. Mix the oil, garlic, salt, pepper, and 2 tbsp. of parmesan cheese. Pour the mixture over the potatoes and gently mix. Roast in the oven for 15 minutes. Right before removing from the oven, sprinkle with remaining parmesan cheese. Remove from oven and sprinkle with parsley.
