1 package of whole rotini
1/4 cup olive oil
1/2 cup chopped fresh broccoli
1/2 cup chopped yellow pepper
1/2 cup chopped red bell pepper
1/2 cup chopped red onion
1 medium zucchini, halved and sliced
1 medium yellow summer squash, halved and sliced
2 tablespoon chopped garlic
3/4 cup fancy shredded Parmesan cheese
2 tablespoons chopped fresh basil
1. Prepare pasta according to package directions; drains. 2.Meanwhile, in large skillet, heat oil over medium high heat. Add broccoli, bell peppers, onion, zucchini, summer squash and garlic. salt and pepper to taste. saute vegetables until tender (about 8-10 minutes) 3. Toss vegetables with pasta, Parmesan cheese and basil. (SALT AND PEPPER ONLY IF YOU WANT TO!)
