Peach Tart with Mascarpone and Cardamom Syrup

An easy summer tart with fresh peaches, creamy Mascarpone and a subtle hint of cardamom. A beautiful dessert to accompany a bottle of Moscato d'Asti.

For the crust:

15 graham crackers
2 c. melted butter

For the syrup:

1 1/2 c. Moscato wine
1/2 c. granulated sugar
1 tsp. ground cardamom

For the filling:

4 large ripe peaches -- enough to cover the top of your pie
2 8 oz. containers of Italian Mascarpone cheese
1/2 c. whipping cream
1/4 c. confectioners sugar
1 tsp. lemon juice
Splash of vanilla essence
pinch of salt
1/2 tsp lemon zest

Marinated Taro Root

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
