It’s Monday & I’ve decided that I have far too little muffin recipes on this here blog, so here we are. I’m trying to change that sad, small fact, though. For starters, I have a Pinterest board for all things muffin, so that is sure to conjure up some inspiration. I’m also trying to be more active about not just dog-earing corners in my beloved cookbooks, but making more recipes from them. ¾ cup whole wheat flour
½ cup white whole wheat or all-purpose flour
1 cup quick oats
1 tsp baking powder
1½ tsp baking soda
1 tsp salt
¼ cup demerara (raw) sugar
½ cup natural peanut butter (we love Smuckers)
½ cup Greek yogurt
1 egg
1 tsp vanilla extract
¾ cup milk
