Pecan Pie Toaster Pastries

Warm toaster pastries filled with pecan pie like filling and topped with a vanilla brown sugar glaze.

Pastry crust
- 1 ½ cups all-purpose flour
- ? teaspoon cinnamon
- ½ teaspoon salt
- 6 tablespoons chilled butter, cut into ½” cubes
- 1 egg yolk
- 1 ½ teaspoons white vinegar
- 2 ½ tablespoons water

Filling
- 1 large egg, slightly beaten
- 3 tablespoons granulated sugar
- ? cup brown sugar corn syrup
- ½ teaspoon vanilla extract
- pinch table salt
- 1 ½ tablespoons melted butter
- 1 teaspoon rum (optional)
- 1 tablespoon all-purpose flour
- ? cup chopped or whole pecans

Glaze
- ½ cup powdered sugar
- 2 teaspoons brown sugar corn syrup
- ½ teaspoon vanilla
- 3 teaspoons water

Marinated Taro Root

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
