Pepper Jack & Spinach Stuffed Cajun Chicken

Panko & cajun spice covered chicken breast stuffed with pepper jack cheese and fresh baby spinach. Not overly spicy, but a nice hint of heat.

1 lb thin sliced boneless skinless chicken breasts (usually 3 breasts)
salt & pepper
6 oz. shredded pepper jack cheese
~1 cup fresh baby spinach (about 18-20 leaves)
1/2 cup panko breadcrumbs (or whatever breadcrumbs you like)
2 Tb cajun seasoning
olive oil
non-stick spray (I always use olive oil spray)
toothpicks
Preheat your oven to 350 degrees. Line a baking sheet with foil and lightly spray with non-stick spray. Set aside. In a small bowl, combine the bread crumbs and cajun seasoning and mix until fully blended....
