They might look plain, but don't judge a cookie by it's exterior! These easy-to-prepare cookies bake up soft and chewy with a delicate, moist crumb. Add a pinch of cinnamon, some raisins or other add-ins if you must, but this recipe was created with the oatmeal cookie purist in mind - the perfect, simple, oatmeal cookie, no fuss and no frills!

2 c. packed light brown sugar
2 sticks butter, softened
2 eggs
2 tsp. vanilla extract
2 Tbsp. milk
2-1/2 c. all-purpose flour
1 tsp. baking powder
1 tsp. salt
1 tsp. baking soda

Preheat oven to 350 degrees F.
Sift together the flour, salt, baking soda, and baking powder. Set aside.
In a large bowl, cream butter and sugar till light and fluffy. Add eggs, vanilla extract, and milk. Mix until well combined. With a wooden spoon, stir in the dry ingredients a little at a time, stirring just until incorporated. Stir in oats till well mixed.
Drop dough by heaping tablespoonfuls onto ungreased cookie sheets about 2 inches apart.
Bake for approximately 9-11 minutes until very lightly browned on edges and the cookies do not look moist in the center.
Allow cookies to cool on sheets for 3-5 minutes before removing to wire racks to cool completely.
