Perfect Potato Salad

There are so many different variations of potato salad with a million different ingredients- but I always end up going back to this one! Totally simple. Totally delicious. The classic potato salad recipe that's been in my family forever.

10-12 Russet potatoes (peeled and chopped)
8 hard boiled eggs (grated)
2 C mayonnaise
1 TB mustard
salt/pepper to taste
3 TB freshly chopped dill
Peel and chop potatoes into bite-sized pieces, then boil until tender with a fork. (About 15-20 minutes) Drain. Fold potatoes together with mayonnaise, grated eggs, mustard, salt, and pepper. Sprinkle fresh dill on top and mix together.
