Deliciously moist and fluffy vanilla cake baked in a rectangle pan, and topped with scrumptiously creamy vanilla buttercream frosting!

For the Cake
3 cups (300g) cake flour*
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
4 large eggs, room temperature
1 and 1/2 cups (300g) caster/granulated sugar
2 teaspoons vanilla extract
3/4 cup (180ml) vegetable oil
1 cup (240ml) buttermilk, room temperature**
For the Frosting
4 cups (500g) icing sugar
1 cup (226g) unsalted butter, softened
2 - 3 tablespoons milk
1 teaspoon vanilla extract

3 T unsweetened cocoa powder

1/2 c light corn syrup

1 unbaked 9-inch pie crust

  1. Preheat oven to 350 degrees F. In a large bowl, whisk together sugar, cornmeal, cocoa and salt. Add eggs, melted butter, corn syrup and vanilla; mix well. Pour into unbaked pie crust.
