Pesto Caprese Sandwich

I had part of a baguette leftover from dinner, fresh mozzarella, and fresh basil in the garden so I decided to make a pesto, then combine it with a caprese sandwich. I spread some pesto on the baguette, sliced up the tomato and cheese, and stuck it in the toaster oven, since toasting makes everything infinitely better. The cheese got all nice and melty, and the baguette was wonderfully crisp. It was a delicious lunch!

For the pesto:
1 cup of fresh basil
1 cup of fresh spinach
1/4 cup walnuts, chopped
2 Tbsp olive oil
1/2 tsp minced garlic, or fresh garlic
Salt and pepper, to taste

For the sandwich:
1 red tomato
Part of a baguette, however large you want your sandwich to be
4 mini balls of fresh mozzarella
Balsamic vinegar
Olive oil
Pesto: Put all ingredients in a blender and blend together until the pesto is fairly smooth. Add more salt and pepper, to taste.
