Pikelets

Pikelets are a sweet and fluffy pancake, originally from New Zealand. My Nana would make these for us every time we would visit with her. They can be made bite size, served with jam and whip cream, or our favourite, butter and syrup. Now that I am a mother, I make these for my children all the time. They are a great breakfast, or late night snack in our home!

1 cup self-raising flour
1/2 tsp baking soda
2 tablespoons sugar
2/3 cup milk
1 egg, lightly beaten
1 tablespoon melted butter
extra butter for the frying pan
Sift the flour, soda and sugar together in a medium bowl. Whisk the egg and milk together. Make a well in the center of the dry ingredients and add the egg and milk mixture. Slowly mix the flour into the egg mixture, whisking until a smooth batter forms. Mix in the melted butter. Heat a frying pan on medium heat. Grease the pan with butter, adding more butter every time you add more batter to the pan. Drop the batter into the pan, cooking until bubbles start to form on the surface. This takes about 1 minute. Turn the pikelets over and cook til golden brown. Serve hot or even room temperature.
