Bursting at the seams with tropical pineapple and coconut cream, this Virgin Piña Colada Sherbet is so good you’ll think you’re on a Caribbean island!

For the pineapple syrup:
1½ cup chopped pineapple
1 cup cold water
1 cup of granulated sugar
For the piña colada sherbet:
1 large pineapple, chopped
Pineapple syrup
½ cup sweetened cream of coconut (I used Coco Lopez)
1 package (6oz) pure unsweetened creamed coconut
? cup heavy cream
1 teaspoon vanilla extract
1 teaspoon dark rum
