1 pound penne pasta
1 cup grated Parmesan and Romano Cheese, divided
1/4 cup olive oil
8 ounces white mushrooms, sliced
2 cloves garlic, peeled and left whole
1/2 teaspoon ground black pepper, divided
1/3 cup sliced green olives
1/4 cup no salt added tomato paste
1/2 teaspoon crushed red pepper
14 ounces tuna fish, drained
1/2 cup low sodium chicken broth
1/2 cup fresh basil, chopped

In a large pot cook pasta according to package directions. Reserve about 1 cup of the pasta cooking water, then drain the pasta. Place the pasta in a large bowl and toss with 1/2 cup of grated cheese.
