Subbing ground beef for expensive cuts of beef and adding in a healthy helping of veggies, makes this a very doable, and delicious, Beef Wellington for anyone. It’s like this fantastic hybrid that crosses the classic flavors of Shepherd’s Pie with all the delectable texture of a traditional Beef Wellington.

1 carrot, diced
1 celery stalk, diced
2 potatoes, diced
2-3 cloves of garlic, minced
olive oil
4 sprigs of rosemary or thyme
1/2 cup of frozen peas (optional)
1 egg, beaten
1 lb of lean ground beef
