Pork Chops with Mushroom Gravy and Spinach

savory juicy chops smothered in mushroom gravy served with creamy mashed potatoes and a side of spinach

Pork chops

4 boneless pork chops, fat trimmed.
1 0.5 oz can cream of mushroom soup
Heat skillet, drizzle with olive oil. pan fry until browned then turn to simmer. mix mushroom soup with half cup of milk and pour over chops. simmer for about 15 to 20 minutes Potatoes 1 potato per person plus one. I used 5 Idaho potatoes. Peel and dice, then boil until fork tender. drain the water and season with sea salt and pepper, then mash with half stick of butter and milk. You can serve with your veggie of choice, we like canned spinach with sea salt and butter.
