Pork with Mushroom Cream Sauce is a perfect fall meal! The chops are tender and juicy while the mushrooms are falvorful and meaty in this creamy delicious sauce.

4 thick center-cut pork loin chops (about 8 ounces each)
1/4 cup all-purpose flour
1 tablespoon vegetable oil
1 tablespoon unsalted butter
1 pound mushrooms (the recipe calls for chanterelles, but I used shiitake)
2 tablespoons minced shallots
1/2 cup dry sherry
1 cup low-sodium chicken broth
1/8 teaspoon dried thyme (I used 1 tablespoon fresh thyme, chopped)
1/2 cup sour cream
2 teaspoons cornstarch
