Pork with Mushroom Thyme Pan Sauce

Crispy pork chops are smothered with woodsy mushrooms and thyme.

3 cups cremini mushrooms, sliced
1 tablespoon margarine
1 pound pork chops
1/2 cup egg substitute
1 cup cracker crumbs
3 tablespoons canola oil
2 tablespoons fresh thyme, chopped, divided
1/4 cup dry white wine
2 tablespoons Dijon mustard
1/2 cup fat free half and half
salt and pepper to taste
