Potato Broccoli and Cheese Soup

I have had a lot of potato soups in the past, but this one feels really good to eat because it has wonderful fresh broccoli, carrots, green onions as ingredients. It's a good way to get some veggies into your kids if they are usually the resistant types.

6 green onions, finely chopped

1 clove garlic

1 stick of butter

2 Tbsp flour

6 cups water

2 cups milk

2 beef bouillon cubes

2 tsp salt

6 medium potatoes, peeled and diced

1/2 cups carrots, grated

3-5 large crowns of broccoli, chopped into small pieces (original recipe was package of frozen broccoli)

1/2 cup cubed Velveeta cheese (cubed)
Saute onions, garlic, and butter in soup pan until tender. Sprinkle with flour and stir. Add water, milk, bouillon, salt, potatoes, carrots, and broccoli. Bring to a boil and turn heat to low. Simmer...
