Potato Kale Hash with Egg

A delicious kale and potato hash with cheese with and egg on top.

5 cups frozen shredded hash browns
1 medium red onion, thinly sliced
4 cloves garlic, sliced
1/4 cup olive oil
2 tablespoons whole grain mustard
1/2 teaspoon black pepper
6 cups chopped kale
1 cup shredded Munster cheese
