French fries with cheese curds and gravy. Classic Canadian comfort food!

For the fries:
3-4 Russet potatoes
2 tablespoons vegetable oil
Salt and pepper, to taste

For the gravy:
4 tablespoons butter
1 shallot, minced
1 clove garlic, minced
1/4 cup flour
4 cups beef stock
2 tablespoons ketchup
2 teaspoons cider vinegar
1 teaspoon Worcestershire sauce
Salt and pepper, to taste
2 cups white cheddar cheese curds, room temperature
