Prosciutto & Cheese Stuffed Cucumber Rolls

It's like a cucumber sandwich without the bread!!! A great snack or lunch on a hot summer afternoon!

1) 1 Large Cucumber cut in half, crosswise
2) 1/2 an ounce of your favorite cheese, shredded
3) 1 tbsp green onion, finely chopped
4) 1 tsp Fresh Dill, finely chopped
5) 1/2 Ounce Prosciutto, finely chopped
6) Salt & Pepper to taste.
A) After Cutting cucumber in half, hollow out the inside of your cucumber, using a melon baller or sharp knife. Set Aside. B) In a medium sized mixing bowl, combine the rest of your ingredients. Mix well. C) Stuff the mixture inside the hollowed out cucumber. D) Wrap each half of the cucumbers in plastic wrap, refrigerate for one hour. Until chilled. E) To serve, remove plastic wrap and slice each half into 6-8 equal portions.
