Pulled Pork (Tacos with BBQ Sauce)

Lightly spiced, juicy slow cooked Pulled Pork in a barbecue sauce. Stuff some tortillas and Voila! By Sugar Salt Magic

1.5kg pork neck / shoulder (bone in, skin removed)
2 Tbsp oil, to seal the outside
1 whole onion, chopped
For the Brine;
½ cup salt,
½ cup sugar
Enough water to cover
2 bay leaves
For the Dry rub;
2 Tbsp brown sugar
1 Tbsp mild paprika
2 tsp dried oregano
2 tsp onion powder
2 tsp salt
1 tsp cayenne powder
1 tsp dried chilli flakes (or add more cayenne if you prefer)
1 tsp ground cumin
1 tsp dried thyme
1 tsp fennel
1 tsp ground black pepper
3 cloves garlic, crushed
For the Sauce;
1/3 cup your favourite BBQ sauce
1 Tbsp tomato paste
2 tsp Worcestershire sauce
1 tsp Dijon
½ tin crushed tomatoes
½ cup chicken or beef stock
To serve;
Sliced avocado
Small tortillas or taco shells
Tasty cheese
Coleslaw
Lime wedges
