Moist and tender pumpkin muffins with chopped fresh apple, sprinkled with a crunchy streusel topping. Divine.

2 1/2 c. all-purpose flour
2 c. granulated sugar
1 T. pumpkin pie spice
1 tsp. baking soda
1/2 tsp. salt
2 eggs, lightly beaten
1 c. 100% solid-pack pumpkin (NOT pumpkin pie filling)
1/2 c. canola oil
2 c. peeled, finely chopped apple

Streusel Topping:
2 T. all-purpose flour
1/4 c. granulated sugar
1/2 tsp. ground cinnamon
2 T. butter
