Great pumpkin cookies. Great for the fall season.

2 cup sugar
2 cups shortening
1 (16 oz) can pumpkin
2 eggs
4 cups sifted flour
2 t. baking powder
1 t. baking soda
1 t. salt
2 t. cinnamon
1 t. nutmeg
1/2 t. all spice
1 cup chopped nuts (if you like)
2 t. vanilla

Cream sugar and shortening; add pumpkin, eggs and vanilla, mix well. Sift dry ingredients together and add to mixture. Stir in nuts. Drop by teaspoon on greased cookie sheet. Frost if desired. Makes 7 dozen...
