Pumpkin Cookies with Easy Caramel Frosting

Growing up, cookies were my favorite dessert! My Aunt is one of the best cooks i know, and she gave me this recipe because she knew how much i loved it. This is the PERFECT cookie to bring to thanksgiving, or even to partys...or even to gobble down at home ;) You won't be disappointed!

1 Cup Shortening, butter flavored
1 Cup Sugar
1 Egg
1 Cup Canned pumpkin
2 Cups Flour
1 tsp. Baking soda
1 tsp. Cinnamon
1 tsp. Ground Cloves
Pinch of salt

For frosting:

6 Tbsp. Butter
3 Tbsp. Milk
1 Cup Brown sugar
2 Cups Powder sugar
2 tsp. Vanilla extract
Preheat oven to 350 degrees. While the oven is preheating, mix together the shortening, sugar, egg, and pumpkin until well combined. Then add flour, baking soda, cinnamon, cloves, and salt. Drop by tablespoon, or i do a heaping tablespoon, onto greased cookie sheet, bake for 10 min. When you are done baking the cookies, it will be time to make the yummy frosting! In a small saucepan, combine the butter, milk, and brown sugar. Cook until melted(DO NOT BOIL) Let cool; then add the powder sugar and vanilla, mix with a mixer until well combined. And your done! So yummy, and so easy to make!
