Pumpkin pancakes are delicious to make and make your house smell like fall! Made these ahead of time and quickly heat up in the morning or pack in lunches for the day.

1 cup of gluten-free flour or whole wheat flour
1/2 cup of old fashion rolled oats (optional- gluten free oats)
1 1/2 tsp. baking powder
1 tsp. cinnamon
Pinch of nutmeg
Pinch of cardamom
Pinch of ginger
dash of salt
3/4 cup of milk (coconut milk for dairy-free)
2 Tablespoons of canola oil
1/2 cup of maple syrup
2 eggs, beaten

Stewed Okra and Tomatoes is a classic Southern dish! Flavored with bacon, onion, garlic and cider vinegar, you know these vegetables are bound to be good.
