Pumpkin Protein Pancakes

Pancakes that are low-calorie, packed with protein, and tastes like a Fall, pumpkin treat!

1/4 C canned pumpkin
1/4 C low fat cottage cheese
2/3 C old fashioned oats
1 egg
1 egg white
1 T honey
1/2 tsp cinnamon
Combine ingredients in a blender/processor until smooth. Pour pancakes onto lightly greased griddle and cook until edges turn golden then flip. Serve with sugar-free syrup and sprinkle with nutmeg!
