Quick and Easy Peanut Butter Fudge

This fudge is quick and easy and I bet you can make it with ingredients you have at home. Perfect for a holiday gift.

1/2 cup (1 stick) BUTTER
2 cups BROWN SUGAR
1/2 cup MILK
1 cup PEANUT BUTTER
1 tsp VANILLA EXTRACT
3 cups CONFECTIONERS SUGAR
MELT BUTTER IN MICROWAVE SAFE BOWL. OR PUT ON STOVE IN A PAN. ONCE MELTED, ADD BROWN SUGAR. MIX WELL. ADD MILK AND PEANUT BUTTER AND HEAT ON STOVE TILL SIMMERING OR IN MICROWAVE FOR 2 MINUTES. REMOVE AND ADD VANILLA AND CONFECTIONERS SUGAR. MIX UNTIL SMOOTH. OR PUT IN YOUR MIXER UNTIL SMOOTH. PLACE FUDGE IN 9X9 PAN AND CHILL. CUT INTO 1-2" PIECES.

3 slices thick cut bacon
1 small Vidalia onion
2 cloves garlic
2 15.5 oz cans diced tomatoes
1 T sugar
2 t fresh thyme leaves
1 dried bay leaf
1/2 t apple cider vinegar
1/2 t Worcestershire sauce
2 c fresh or frozen okra
salt and pepper ( to taste )
