Quick Bread Sticks

My roommate and life long friend used to make these bread sticks all the time when we were at college. I added a little flavoring from a favorite cookbook and some cheese. With the cheese, it takes me back to eating bread sticks at Craigo's in Rexburg, ID while I was at Ricks (now BYUI). We like to dip them in our favorite spaghetti/marinara sauce.

1 1/2 C water
1 T yeast
1 T sugar
1 tsp salt
3 1/2-4 C flour
1/3 C olive oil
1 tsp garlic powder or 2 cloves of minced garlic
2 T Parmesan cheese
1-2 C mozzarella cheese (optional)
1 C spaghetti sauce (optional)

Mix water, yeast and sugar together in a bowl and let it sit for 10 minutes. Add 2 C flour and salt and mix. Add remaining flour until dough isn't sticky anymore.
Take small balls of dough with greased hands and roll into ropes, twist if desired. You can also roll them out and cut them with a pizza cutter. Place on greased cookie sheet. Let raise for 10-15 minutes.
Meanwhile, mix oil, garlic powder or garlic, and Parmesan cheese together. Brush onto bread sticks.
Top with cheese if desired before baking.
Bake at 350 degrees for 10 minutes.
Dip in spaghetti sauce while hot if desired.
