These Quick and Easy Pineapple Upside Down Muffins are a special treat for any brunch or breakfast party-

These are best made in six large muffin cups to accommodate the pineapple ring
2 C. Master Muffin Mix or 2 Cups any brand Yellow Cake Mix
1 Tbsp honey (Only if using Master Muffin Mix)
1 egg
1-1/4 C. Milk
1 Tsp. Vanilla
1 Tsp. Cinnamon
¼ C. liquified coconut oil (or other light oil of preference)
Upside Down Topping
1 20-0z Can pineapple slices in own juice
1 bottle maraschino cherries
2 Tbsp. brown sugar
½ Tsp. cinnamon
¼ Tsp. allspice
2 C. Master Muffin Mix or 2 Cups any brand Yellow Cake Mix
1 Tbsp honey (Only if using Master Muffin Mix)
