Quick Lemon Ice Box Pie

Cool and creamy, the lemon flavor with the graham crackers brings back memories of relaxing at my grandmas house back in the day. This recipe is so easy and quick. No special tricks or ingredients needed to have a special treat.

1 box vanilla ice cream, softened
1 (3.4oz) box instant lemon pudding
3/4 c. milk
1 t. lemon extract (optional)
1 c. graham cracker crumbs
1. Allow the ice cream to soften some before beginning. 2. Sprinkle 1/3 c. of graham cracker crumbs to the bottom of your dish. You may use any dish including a pyrex dish, a pie place, or what I use is an 8-inch cheesecake springform pan to make a pretty edge. 3. In a large bowl, combine milk, pudding mix, and lemon extract. Stir quickly and immediately add the softened ice cream. Mix well. 4. Pour half of the ice cream mixture into the pan. Sprinkle another 1/3 c. of crumbs over the top. Repeat with the remaining ice cream and crumbs. 5. Freeze at least 2 hours. Cut and serve frozen.
