Quinoa Mac n' Cheese

Macaroni and cheese gets a healthier twist with quinoa replacing the macaroni.

1 ½ c. quinoa
3 c. water
2 large eggs
3/4 c. milk
1/4 c. non-fat Greek yogurt
1 tsp. ground mustard
1/2 tsp. salt
1/2 tsp. garlic salt
1/2 tsp. ground black pepper
2 c. grated cheddar cheese, divided
1. Preheat oven to 350 F. Grease 8 ramekins or a 2-qt baking dish; set aside. 2. Cook quinoa with water according to package directions. 3. Let quinoa stand 5 minutes. 4. Meanwhile, whisk together eggs, milk, yogurt, mustard, salts, and pepper in large bowl. 5. Stir in quinoa and 1 ½ cups cheese. 6. Pour into prepared baking dish(s). 7. Sprinkle additional 1/2 cup cheese over top. 8. Bake 25-35 mins, or until just browned around edges and quinoa mixture looks dry and set.
