Quinoa Salad

This salad is fresh and tasty! A perfect side dish or a pot luck for any picnic! It tastes even better the next day so make LOTS!

Quinoa:
1 cup quinoa
2 cups water

Salad:
1/4 cup Feta cheese
1 bell pepper, diced
1/4 red onion, chopped
1/2 cup broccoli florets
1 carrot, grated
1/4 cup cashews, chopped
1/4 cup Craisins

Dressing:
4 tablespoons Olive oil
1 tablespoon lemon juice
1 tablespoon white wine vinegar
salt and pepper
1 clove garlic, pressed
1 tablespoon honey
1 tablespoon Dijon mustard
Make the quinoa. Add water to quinoa and bring to a boil for 5 minutes. Stir then cover and reduce heat to a simmer for 15 minutes. Fluff with a fork and cool. Add all the salad ingredients to the...
