Quinoa Stuffed Peppers

These quinoa stuffed bell peppers are perfect for meatless meal because they'll fill you up and they're packed with all the good stuff like spinach, tomatoes, black beans, carrots and cheese!

1 medium onion, diced
4 cloves garlic, minced
6 oz. fresh baby spinach, (about 4 cups)
2 large carrots, grated
4 large bell peppers
3/4 cup uncooked quinoa
2 (15 oz) cans diced tomatoes, drained, liquid reserved
1 can black beans, rinsed and drained
1 Tbsp cumin
1 cup shredded colby jack cheese (more to sprinkle on top, if desired)

3/4 cup uncooked quinoa
2 (15 oz) cans diced tomatoes, drained, liquid reserved
1 can black beans, rinsed and drained
1 Tbsp cumin
1 cup shredded colby jack cheese (more to sprinkle on top, if desired)
Preheat oven to 350 degrees F.
Rinse and cook quinoa according to directions. Set aside once cooked.
Saute onion for 5 minutes in a large skillet over medium heat. Add cumin and garlic, saute 1 minute.
