1 cup quinoa
2 tbsp clarified butter or oil
1/2 cup chopped onion
1 cup corn kernels, fresh or frozen
1 cup baby lima beans, canned or frozen
2 roma tomatoes, chopped
1/2 tsp dried thyme
1 1/2 cups + 2 tbsp vegetable stock
1/2 tsp salt
2 tsp lemon juice
