Celebrate summer with a delicious spread of Raspberry Lemon Cookies!

1 1/4 cup fresh raspberries ( mashed )
1 Tbsp. sugar
Dough:
1 c. sugar
3/4 c. butter ( softened )
1 large egg
1 tsp. lemon extract
1 tsp. finely grated lemon rind ( save the lemon for the drizzle )
2 c. plus 1/2 c. all-purpose flour (divided)
1/2 tsp. baking soda
1/2 tsp. cream of tartar
1/4 tsp. salt
3-4 drops red food coloring ( optional )
Drizzle:
3/4 c. powdered sugar
1 Tbsp. fresh squeezed lemon juice
