Raspberry Oatmeal Cake with Coconut Broiled Glaze

A soft, moist cake swirled with sweet raspberries and topped with a toasted carmel coconut glaze!

For the Cake
1 1/2 C boiling water
1 C old-fashioned oats
1/2 C sugar
1/2 C brown sugar
1/4 C butter, softened
1/4 C non-fat plain yogurt
2 eggs
1 C whole wheat flour
1 C all-purpose flour
1 tsp baking soda
1 tsp salt
1 tsp vanilla extract
1/2 C raspberry preserves
For the Topping
1 3/4 C shredded coconut (sweetened or unsweetened depending on preference)
2/3 C brown sugar
1/3 C butter, melted
1/4 C half & half

Marinated Taro Root

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
