1 egg
2 tsp vanilla extract
2 Cups plain flour
2 tsp baking powder
1/4 tsp salt
1/2 Cup raspberry jam

Icing:
2 Cups icing (confectioners) sugar
2 Tbsp raspberry essence
1 drop pink food coloring
1 Cup sugar
