Red Pepper and Baked Egg Galettes

This is a beautiful breakfast dish that makes a great dinner. It is easy and tastes delicious.

1 1/2 bell peppers, sliced
1 red onion, sliced
1 cup mushrooms, sliced
fresh sprigs of thyme
1 teaspoon cumin
1 teaspoon coriander
1/4 cup oil
handful fresh parsley, chopped
1 sheet puff pastry, thawed
1 egg, beaten, for brushing the pastry (I used an egg white. Doesn't brown the pastry as well as the whole egg)
8 teaspoons sour cream
1 tablespoon fancy mustard
4 large fresh eggs
salt and fresh cracked pepper
