Red Velvet Cheesecake Cakes

A classic red velvet cake with a delightful cheesecake center. My personal fave....

Red Velvet: 2 1/2 c. flour
1 1/2 c. sugar
1 tsp baking soda
1 TB cocoa powder
1 tsp salt
2 eggs (room temp)
1 1/2 c. vegetable oil
1 c. buttermilk
1 tsp vanilla extract
1 tsp white distilled vinegar
2 oz red food coloring (or more. Who measures?)

Cheesecake:
20 oz cream cheese, room temperature
3/4 C sugar
1/2 TB vanilla extract
1/4 tsp coarse salt
2 large eggs
1/2 C sour cream

For the Frosting:
Pastry Pride – Love that stuff!
