So, who doesn’t immediately think of a hacked-up armadillo cake when they hear the words “red velvet”? If I hadn’t had red velvet cake several years before the movie “Steel Magnolias” came out, that would probably be my first thought too. But for me, a red velvet cake reminds me of home in Lancaster, Penna., where Oregon Dairy made the absolute best red velvet sheet cakes, topped with fluffy, whipped white frosting. I love red velvet so much that I even requested one for my high school graduatio

1 stick unsalted butter at room temperature
1-1/2 c. sugar
2 large eggs at room temperature
1 c. buttermilk
2-1/2 c. sifted cake flour
2 tsp. Dutch-process cocoa powder*
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
2 oz. red food coloring
1 tsp. distilled white vinegar
1 tsp. vanilla extract
1/4 tsp. orange extract
*If you don't have or can't find Dutch-process cocoa powder, unsweetened cocoa powder can be substituted in its place, along with an additional 1/8 tsp. baking soda.
