Red White & Blue Cherry Blueberry Shortcakes

A heavenly patriotic dessert that's light and wonderful! Perfect for your Memorial Day or 4th of July get together.

For the Sweet Cherry Sauce
4 1/2 c. fresh pitted cherries
1/8 c. plus 1 tbsp. sugar
1/8 c. cold water
1/2 lemon, juiced
1 tbsp. cornstarch
For the Shortcakes
1 c. cake flour
1 c. whole wheat pastry flour
1/4 c. sugar
2 tsp. baking powder
1/4 tsp. salt
6 tbsp. cold unsalted butter, cut in to small pieces
3/4 c. plus 2 tbsp. heavy cream
For the Whipped Cream
1 1/4 c. heavy cream
2 tsp. powdered sugar
1/2 tsp. vanilla

For the Sweet Cherry Sauce Remove pits and stems from cherries and place 3 c. in a small saucepan. Add water and sprinkle with sugar. On medium-low, bring the cherries to a slow boil. Reduce heat and simmer...
