Rhubarb Streusel Squares

Unlike most rhubarb dessert recipes, these are not overly sweet and have a touch of the rhubarb tartness that comes through. These are a BIG hit with everyone -- even friends that are busy will stop by when they know these are on the table!

Crust:
1 cup flour
1/3 cup powdered sugar
1/3 cup butter
Filling:
1 1/4 cups sugar
1/4 cup flour
1/2 teaspoon salt
2 eggs, slightly beaten
3 cups fresh or frozen rhubarb, chopped into 1/4" bits
Topping:
3/4 cup flour
1/2 cup sugar
1/4 teaspoon cinnamon
1/3 cup butter
1 cup flour
1/3 cup powdered sugar
1/3 cup butter
Filling:
1 1/4 cups sugar
1/4 cup flour
1/2 teaspoon salt
2 eggs, slightly beaten
3 cups fresh or frozen rhubarb, chopped into 1/4" bits
Topping:
3/4 cup flour
1/2 cup sugar
1/4 teaspoon cinnamon
1/3 cup butter
1. Heat oven to 350. Combine flour and powdered sugar. Cut in butter until crumbly, or pulse in food processor until pea sized. Press into ungreased 9" square pan. Bake for 15 min. Let cool for 10 minutes.
2. While crust is cooling, combine filling ingredients; blend well. Pour over partially baked crust.
3. Combine topping ingredients, either cutting in butter with pastry blender or using food processor. Sprinkle over rhubarb mixture, making sure that the edges and top are completely covered. Bake 45-55 minutes or until topping is light golden brown and rhubarb is tender.
4. Let cool before cutting and serving.
