Risotto with Spinach & Feta

This risotto is easy and has a twist because you use Feta rather than Parmesan to make it creamy. This is good for that leftover Feta in the fridge.

3 cups homemade chicken stock
Olive oil
2 cloves of garlic, minced
1 small cup onion, diced
1 cup Arborio rice
¼ cup dry white wine
2 cups spinach
½ cup feta cheese
