ROAST PORK TENDERLOIN, CIDER BRAISED CABBAGE AND APPLES & WHITE BEAN AND KALE

When winter is upon us, this is the perfect warmer...nice contrast between rich and hearty with tangy and light. While this may seem complicated, it really isn't. You'll need two pans on the stove while the pork is roasting in the oven. I use canned beans so it makes it just as easy as any Sunday roast.

1 pound whole pork tenderloin
4 slices bacon (lardons)
1 medium onion (finely chopped)
½ cup kale (chopped)
550g can of cannellini beans
2 tbsp mustard
1 tbsp dried or fresh thyme
2 cups chicken stock
3 tbsp vegetable oil
3 tbsp butter
2 julienned apples (whatever you have, but they should be sweet, not tart)
½ whole white cabbage (thinly sliced)
1 tbsp caraway seeds
2 tbsp sugar
½ cup white wine vinegar
160z dry cider (tall boy can)
salt and pepper

-you'll want to start the beans first
-sautee bacon until browned
-add onions and kale and cook a few more minutes
-rinse and add beans
-add mustard, thyme and half the chicken stock
