Roasted Beet, Goat Cheese, Freekeh, Pistachio Chopped

Chopped Beets into cubes chops the roasting time. Have you heard of Freekeh? Check it out on the recipe. Goat Cheese and crunchy Pistachios round out the flavor texture combo of this "Balanced Meal in a Bowl".

Bowl Ingredients:
2 cups Roasted Beet Cubes, about 3-4 Beets
4 cups Baby Spinach, Chopped
1 cup Freekeh or any cooked grain you have. My personal “go to’s” besides Freekeh are Brown Rice, Quinoa, or Barley
1 cup microwave steamed Broccoli, Chopped
1 cup White Beans, if canned, drained and rinsed
2 Tablespoons Pistachios, Chopped…they go farther
2 oz. Mild Goat Cheese, crumbled
1/4 cup finely Chopped Kalamata Olives

Zing Factor:
1/2 cup Chopped Beet Greens

Dressing Ingredients:
1 Tablespoon Olive Oil
1 Garlic Clove, finely Chopped
2 Tablespoons Balsamic Vinegar
Pinch of salt, if desired
Freshly Ground Black Pepper, to taste
