Roasted Brussels Sprouts with Bacon

Roasted Brussels Sprouts - smothered in a bacon fat, maple syrup, balsamic vinegar dressing & tossed w/ goat cheese, parmesan, & bacon!

Bacon:
4 strips bacon, diced
Dressing:
2 tablespoons warm bacon fat
2 tablespoons real maple syrup
1 and ½ tablespoons balsamic vinegar
¼ teaspoon salt (plus more to taste after the brussels sprouts have roasted)
? teaspoon freshly ground black pepper
Brussels Sprouts:
1 pound Brussels sprouts
¼ cup shredded Parmesan
¼ cup crumbled goat cheese
Bacon (from above)
Bacon: Lay bacon in a single layer on a cold skillet. Turn heat to medium and cook the diced bacon until crispy.

2 cans (15.25 oz) whole kernel sweet corn
1/2 cup onions ( diced )
1 can (4 oz) green chilis ( fire-roasted and diced )
1/3 package block style cream cheese ( full fat )
3/4 cup Mozzarella Cheese ( shredded )
3/4 cup Pepperjack Cheese
1/2 cup LALA Crema Mexicana
1 package tortilla chips
cilantro ( for garnish )
PAM Spray or similar
