Roasted Buffalo Cauliflower

This is a healthy, guilt-free way to enjoy all the great flavors of Buffalo wings!

1 head cauliflower
1 tbsp olive oil
salt and pepper
1 tbsp butter
1/3 cup buffalo sauce
celery sticks
blue cheese or ranch dressing
Preheat oven to 425 degrees. Cut cauliflower into smaller florets. Toss with olive oil and sprinkle with salt and pepper. Spread out on a baking sheet coated with cooking spray.
