1 head green cabbage
1/4 cup unsalted butter (or canola oil if vegan), divided
salt, pepper and garlic powder to taste
lime wedges for garnishing

For the Spicy Lime and Cilantro Sauce:
1/4 cup extra-virgin olive oil
3 tablespoons fresh lime juice
1 teaspoon fish sauce (omit if vegan)
2 teaspoons minced garlic
1/4 cup chopped cilantro leaves
1/2 teaspoon sea salt
1/2 teaspoon cayenne pepper
1/4 teaspoon brown sugar
