Roasted Kielbasa & Vegetables

A hearty oven-baked meal.

1 lb. fully cooked Kielbasa or Polish sausage, cut into 1” chunks.
6 potatoes cut into 1-inch chunks
1 red bell pepper, cut into 1-inch chunks
1 green bell pepper, cut into 1-inch chunks
1 med. sweet onion, cut into 1-inch chunks
3 small zucchini (or 12 oz. larger zucchini), cut into 1-inch chunks
4 oz. button mushrooms, quartered
2½ tsp. Cajun seasoning
½ tsp. black pepper
Preheat oven to 350 deg. Lightly grease a medium-size roasting pan. Add sausage and vegetables, sprinkle with seasoning and pepper. Cover and bake 30 minutes. Uncover, stir and bake an additional 30 minutes. Tips: To ensure the potatoes are tender, I microwave the chunks for 6 min. before adding to the roaster
